Sure! Here's a step-by-step recipe for making Andhra Chicken Curry, a delicious and spicy chicken dish from the Andhra Pradesh region of India:

Ingredients:

  • 500 grams chicken (cut into medium-sized piece's.
  • 3 medium-sized onions (finely chopped)
  • 2 medium-sized tomatoes (finely chopped)
  • 2-3 green chilies (slit lengthwise)
  • 2 tablespoons ginger-garlic paste
  • 1/2 cup yogurt (plain, whisked)
  • 2 tablespoons oil
  • 1 tablespoon ghee (clarified butter)
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 10-12 curry leaves
  • 1 cinnamon stick (about 1-inch)
  • 4-5 cloves
  • 4-5 green cardamoms
  • 1 teaspoon turmeric powder
  • 1 tablespoon red chili powder (adjust to your spice preference)
  • 1 tablespoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • Salt to taste

Fresh coriander leaves (for garnish)


Instructions:a

Marination: Wash the chicken pieces thoroughly and marinate them with half of the ginger-garlic paste, half of the turmeric powder, and a little salt. Let it sit for at least 30 minutes to absorb the flavors.


Heat oil in a heavy-bottomed pan or a deep pot over medium heat. Add mustard seeds and let them splutter. 

Then add cumin seeds, curry leaves, cinnamon stick, cloves, and green cardamoms. Fry for a minute until they release their aroma.

Add the chopped onions and green chilies. Sauté until the onions turn golden brown.

Now, add the remaining ginger-garlic paste and cook for a couple of minutes until the raw smell disappears.

Add the chopped tomatoes and cook until they become soft and the oil starts separating from the mixture.

Add the marinated chicken to the pan and stir well to coat the chicken with the spices. Cook for 5-7 minutes, stirring occasionally, until the chicken changes color and starts to brown slightly.

Reduce the heat and add the turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix everything thoroughly.

Cover the pan and let the chicken cook on low heat for about 15-20 minutes or until it is tender. Make sure to stir occasionally to prevent sticking or burning.

Once the chicken is cooked, add whisked yogurt to the curry and mix well. Allow it to simmer for another 5 minutes, stirring gently.
Finally, add ghee and garam masala to the curry. Stir well to combine and let it cook for a minute or two more.

Turn off the heat, garnish with fresh coriander leaves, and serve hot with steamed rice or your choice of bread.
