Bamboo Shoot Curry, also known as "Khorisa Curry" in Assam, is a popular Assamese dish. Here's a basic recipe for making it:


Ingredients:


Fresh bamboo shoots (tender ones) - peeled, sliced, and soaked in water

Mustard oil

Mustard seeds

Fenugreek seeds

Green chilies - slit

Garlic cloves - crushed

Ginger - grated

Turmeric powder

Salt to taste

Water

Fresh coriander leaves for garnish


Instructions:


Heat mustard oil in a pan until it starts smoking. Remove it from the heat and let it cool slightly.

Reheat the oil, add mustard seeds and fenugreek seeds, and allow them to splutter.

Add crushed garlic, grated ginger, and green chilies. Sauté until aromatic.

Add turmeric powder and the soaked bamboo shoots. Stir well.

Pour in enough water to cover the bamboo shoots. Bring it to a boil, then reduce the heat and simmer until the bamboo shoots are tender. This may take 20-30 minutes.

Season with salt to taste and garnish with fresh coriander leaves.
